Olives of the local Mallorquina variety are small and green, yellowish-green or brownish-black, depending on the degree of ripening, with a tart taste and an unctuous pulp rich in unsaturated fatty acids.

This DO is for Mallorca's unique olives, preserved by the traditional brining technique to ensure long keeping. They make a perfect preserved food and come from olive trees that are grown on hillside terraces bounded by dry-stone walls.

These tasty olives are sold in three different forms: whole natural olives, with an intense taste and a long aftertaste; tart split green olives dressed with fennel and chili pepper; and black natural olives harvested after veraison sets in, dressed with DO Aceite de Mallorca extra virgin olive oil. All three types are delicious as appetizers or as an accompaniment for “pa amb oli”.
